Let it sit for 10 minutes until it activates and becomes foamy. Add the egg, olive oil, and salt. Gradually add flour while mixing, until a soft, non-sticky dough forms. Let the dough rise in a warm place until it doubles in size (about 30–40 minutes). Divide the dough into equal parts (5 or 6). Roll each piece out into a flat circle and spread with butter or oil. Stack the layers on top of each other, then cut the stack into triangles (like slicing a pizza). Roll each triangle into a crescent shape (like a croissant) and place them on a baking tray lined with parchment paper. Let the shaped rolls rest for another 15 minutes. Brush with a mixture of egg yolk and a little milk. Bake in a preheated oven at 180°C (with a fan) for about 35–40 minutes, or until golden brown.
